Listed in Wine & Spirits Top 100 Wine Cellars in the world, Kabaj is located in Dobrovo, Slovenia and focuses on minimal intervention winemaking as well as Slovenian, Friulian & Habsburg cuisine. Winemaker Jean Michel Morel, who hails from France, moved to the region after falling in love with Katja Kabaj and is responsible for the international reputation they have in the natural wine community. All wines are aged in French oak, as well as small use of Georgian Kvevris.
100% Rebula, or the local name for Ribolla Gialla, made with 30 day skin contact maceration to give it a bold orange color and 24 months of aging in French oak. Rebula is Slovenia's most popular grape and their most notorious in international markets. Kabaj Rebula has the citrus flavors of orange wine as well as honey and almond scents with bright acidity and minerality.
Green Sauvignon, Sauvignonasse, Sauvignon vert, Friulano, Tokaj... The names for this grape vary by several regions it finds a home in such as Hungary, Italy, and Slovenia. In Brda, it is locally called Ravan and this wine is made with just 7 days of skin contact maceration. It gives citrus flavors as well as tree fruits in apricot, melon and apple.
Pet-Nat's are not your traditional sparkling wine, and are very spontaneously made as they undergo only one continuous fermentation. San Lurinz Corvus is a bright sparkling rose made with Pinot Noir and has ripe, juicy flavors of pomegranate, strawberry and cherry as well as some natural yeasty characteristics. Extremely enjoyable.
Another pet-nat made with natural wild yeasts as well as with the local Malvazija (Malvasia) grape. Crisp flavors of honey, chalk, pineapple and stone fruit are prominent with strong acidity and bubbles.
